Chocolate and Spinach Cupcakes

Hello Everybody,
Today I have a recipe for Chocolate and Spinach Cupcakes.
I found this recipe online and the link to it is here
Ingredients: 
100g spinach, wilted, cooled and puréed or finely chopped. Using your hands squeeze out the excess water.
150g unsalted butter, 150g caster sugar, 2 large eggs, 1 tsp vanilla extract, 2 tbsp cocoa powder, 100g chocolate chips/melts, 200g self-raising flour, 1 tsp baking powder.
Method:
Pre-heat the oven to 180°C. Fill a 12-hole muffin tin with muffin cases. Cream together the butter and sugar. Add the eggs and vanilla extract and beat. Stir in the spinach. Sift in the flour, cocoa powder and baking powder. Fill the muffin cases 3/4 full. Bake in the pre-heated oven for 15-18 minutes until well risen and firm to the touch. Cool completely on a wire rack.
It is optional to add frosting but I didn't have any time to.

These were surprisingly good. You can't even taste the spinach and it is good for you so it is a win win situation.

Potato and Leek Soup

Hello Everybody
Today I have a recipe for Potato and Leek Soup. This is super easy and super yummy :)

I got this recipe off my Dad.
Ingredients: 
1 small Leek, 2 medium Potatoes, 1 tablespoon Flour, 3 cloves of Garlic, Knob of Butter, Pinch of Nutmeg, Pinch of Salt, Handful of Marjoram  1/4 of a small Onion, 3 cups of Vegetable or Chicken Stock, Some Cream and Sour Cream.
Method
Put Butter in a pot and heat up. Cut Onion into small dices. Repeat with Leeks. Sweat onion in pot until onion is glassy. Add the small diced leeks. Finley dice potatoes. Add to the pot. Add the Garlic, Nutmeg, Salt and Marjoram. Fill up with the Vegetable or Chicken Stock. Stir it. Once ready add the cream and sour cream. Once mixed all together, pour into bowls and serve.

Spinach And Cheese Muffins

Hi Everyone,
Todays blogpost is a recipe for Spinach And Cheese Muffins.
I got this recipe off of my dad.
Ingredients:
300g Flour, 25g Baking Powder, Pinch of Salt, Pinch of Nutmeg, Pinch of Pepper, One Egg, 200mls Milk, 90mls Oil, Spinach, Herbs (Optional), 50g Cheese (I used Cheddar), 1/2 of an Onion.
Method:
First off, heat the oven to 160º at normal bake or fan bake. Then you want to cook the onion and the spinach in a pan. When it is ready, combine all dry ingredients together in a bowl. Combine all wet ingredients in another bowl. Once all combined put the bowl, with the wet ingredients, into the bowl, with the dry ingredients, and combine all together. When all mixed together, spoon into muffin cases, put on a tray and then put them in the oven. Let it cook for about 15 minutes, or until it is cooked inside. Once they are cooked, take them out of the oven and let it cool for 5 minutes. When they are cooled, put them on a plate and serve.

These were so so so yummy and a nice snack to have. They were simple to make and I definitely suggest to make them yourself.

Roasted Vegetables

Hi Everyone,
Today I am going to do a blog post on Roasted Vegetables.
I was very lucky because my Dad was given some incredibly Fresh Vegetables. I wanted to do something simple with them, so I roasted them, as a side dish for dinner. Here is what we did:
Ingredients: The vegetables I used was: Orange Baby Carrots, Purple Baby Carrots, Beetroot and Turnips.
Method: Firstly, I peeled the Carrots. I then cut the Vegetables and placed them in a tray, with baking paper underneath. I then heated the oven to 180º. I put some olive oil and salt on top of the Vegetables and put them in the oven for about ten minutes. I took them out once cooked, and served.

These were really good and so so so simple to make. They were great to have as a side dish for Dinner!!

Spinach Burritos

Hello Everybody,
Todays blogpost is a recipe for Spinach Burritos :)
*Disclaimer* I found a recipe of this on the website Yummly. I used it as inspiration.
Makes 3 Burritos
Ingredients: 
3 eggs, Spinach, Cheese (Preferably Mozzarella), Olive Oil, Tortillas (I used wrap bases). 
Method: 
Whisk Eggs in a bowl. Heat a pan to medium heat. Once heated add Olive Oil to coat the bottom. Add the Eggs to the pan and stir occasionally until the Eggs are cooked. Put aside on a plate. Once the Eggs are on the plate, pour some more Olive Oil (about a teaspoon) into the pan and put the Spinach into the pan. Stir often until the Spinach is wilted (meaning, becoming limp). Put the Spinach onto a different plate once it it cooked. Get out your Tortillas or Wrap Bases (I did three wrap bases). Put the Eggs, Spinach and Cheese (preferably Mozzarella) onto the Tortillas or Wrap Bases, using the ingredients evenly. Wrap tightly. Heat the oven to about 180º. Put the Burritos onto a oven tray (with baking paper underneath so you don't have to clean the Cheese off the tray incase the Cheese melts onto the tray). Put into the oven for about ten minutes or until it is warm. Take out of the oven once warm. Place on plate, cut in half and serve.

Spinach And Strawberry Smoothie Recipe

Hello Everybody,
Today I am going to be doing a Spinach and Strawberry Smoothie Recipe. I know it doesn't sound very nice, but it tastes very good. You can hardly taste the Spinach :)
Ingredients: Spinach, Strawberries, Blackcurrant Juice, Water.
Method: First off wash the Spinach and Strawberries. Get your blender and put your Spinach in. Cut your Strawberries and put into the blender. Pour a little bit of Blackcurrant Juice and Water. You can also add ice to make it colder. Put the lid on the blender and blend together. Pour into a glass and serve.

This tasted really good and is a good option for breakfast.

Savoury Scones Recipe

Hello Everybody,
Today I am going to blog about a Savoury Scone Recipe I made with my Dad (who is a Chef) 
(I used an Edmonds Cookery Book Recipe about Scones as a guideline.)
This recipe makes about 6 Scones.
Ingredients: 1 cup of Flour, 1/12 teaspoons of Baking Powder, a pinch of Salt, 50 grams of Butter, 50 grams of Cheese, approximately 80ml of Milk (you might not need to use all the milk) and Herbs. (I am growing all of these) I used Chives, Parsley, Mint and Lovage.
Method:
Sift dry ingredients together in a bowl. Add the Butter and Cheese. Start rubbing and mixing it all together in the bowl. Mix to a light dough with the Milk. Once all combined, turn on to a floured board, knead, and roll out. Cut with a scone cutter and put on an oven tray. I put the heat at 180°c and baked for about 10 minutes. Once finished, served.

Healthy Salad Recipe

Hello Everybody,
Sorry I haven't been posting as much :(
Today though I am giving you a Healthy Salad Recipe :)
Ingredients: Lettuce (I have grown this myself :), Carrots, Avocado, Tomato, Mint and Parsley from my garden too :). Optional: Lemon or a Dressing.
Steps:
1. Cut all the Vegetables up. Tip: Roll the Lettuce up because it is easier to cut :)
2. Put all of the Vegetables into a bowl and mix together.
3. Sprinkle some Mint and Parsley on top of your Salad.
4. Squeeze some Lemon or a Dressing and serve.

UPDATE!!

Hello Everyone,
Just a quick update for you :)
Everything is going great with my Vegetable Garden. Every plant is looking healthy and is standing tall. They are all surviving seeing it has been cold and rainy in Christchurch. I have just been watering them if they need it. 
Look out soon because I have been working on a savoury scone recipe using herbs you can plant yourself ;)

Planting Vegetables

Hello Everybody,
Yesterday I went to buy some Vegetables. I bought Snow Peas, Peas, Beetroot, Spinach, Leeks, Broccolini, Mini Cabbages, Lettuce and a Cranberry Plant. At home I already had Parsley, Chives, Mint, Basil, Lovage and Runner Beans.
Today was planting day.

Mentor Meeting and Buying Veges

Hello Everybody,

I had my Mentor Meeting with my Mentor. I went very well and my mentor is very helpful. She has her own vegetable garden at her home and at our school.
In a couple of days I am going to go and buy my Vegetables. Some are Spinach, Rocket, Pak Choi, Beetroot and lots more. I will also buy Potting Mix and those Netting for the Garden.
I will use these vegetables to create recipes for Breakfast, Lunch, Dinner and Dessert.
My idea was to get boxes for Breakfast, Lunch, Dinner, Dessert and write the recipes on little cards. If you have any suggestions of how I could present it, leave it in the comments below.

School Lunch Ideas

Hello Everybody,
Todays Blogpost is going to be 3 ideas for School Lunches.
1. Healthy Chicken Wraps:
Ingredients: Chicken (Substitute Ham or Salami) Lettuce (You can grow Lettuce in your Garden) Cheese, Wraps. (If you want to be extra Healthy, use Wholemeal Wraps)
First off you have to cook your Chicken.
Lay out your Wrap and add Chicken, Lettuce and Cheese. Roll the Wraps up. Place Wrap in SnapLock Bag (Substitute Tinfoil) so the Wrap doesn’t fall apart.
And there we go. Your very own Healthy Chicken Wraps.
2. Healthy Salad.
For this Recipe all of the ingredients can be grown in your Garden.
Ingredients: Lettuce, Spinach, Cucumber, Tomato, Strawberries and anything else that you would like to add.
Grab a Container and your ingredients. Mix them all in your container and you are done.
You could also make a Fruit Salad instead of a Greens Salad.
3. Trail Mix
Ingredients: Any Nuts that you prefer (Peanuts, Cashews, Almonds, Pistachios, Pecans, Pine Nuts, Hazelnuts etc..) Raisins or Chocolate Raisins. Any dried up fruit. Cranberries for example. Anything else you would like to add.
Grab all of your ingredients and mix in a container and you’re done.
Extra: Add either Cucumber, Strawberries, Lemon or Mint Leaves (You can grow all of these plants in your garden) to your water to make it taste better.

Grapes, Grapes, Grapes

Hello Everybody,
For today’s blogpost I am going to do it on Grapes.
At my House, I have a Grape Tree in my Backyard. Now is the perfect time to pick Grapes. You want to start planting a Grape Tree in the Early Spring because they need lots of Sun and Water. If you would like any more information about how to plant a Grape Vine, let me know in the comments below.
Now onto why Grapes are good for you.
Apparently, studies have shown Grapes can prevent Cancer, Heart Disease, High Blood Pressure and Constipation. Also eating Grapes may help to alleviate symptoms of allergies including runny nose, watery eyes and hives. There hasn’t been any human studies to prove this though.
Here is some ways to incorporate Grapes into your diet.
  • Slice grapes in half and add them to a salad.
  • Make your own fruit cocktail with fresh fruit (including grapes.)Drizzle a small amount of honey on top of the fruit mixture for an extra sweet treat.
  • Freeze grapes and eat them as a snack or dessert on a hot day.
  • Have a quick 100-calorie snack with 1 cup of fresh grapes.
  • If you don’t like Grapes, you can dry them up into Raisins. For an extra, dip the Raisins or Grapes into Chocolate.

Hello,
My name is Amelia.
I am a Year 8 student at Selwyn House School. In Year 8 we have to do a Passion Project. A Passion Project is when we chose something that we are Passionate about and we do something with our Passion.
For my Passion Project I have chosen to do a blog on Healthy Eating using Vegetables from your garden (I am growing Vegetables in my Garden) and using them for recipe ideas for Lunches, School Lunches, Dinners and Desserts.
